Blackberry Supreme Cake


Last week was my mother's birthday.  Of course, I was not here to celebrate with her on her actual birthday so made a cake and dinner this week.  I've been thinking about this cake for a while now.  I knew I wanted it to feature berries and I decided on blackberries because we have a freezer full of them from last summer.  I also knew I wanted it to be three layers, because I love cakes with lots of filling.  The rest of the cake was created on the go as I thought about what would be good.  So here we go.  The blackberry supreme cake, three layers of white cake, filled with blackberry and cream cheese mixture filling, and iced with a blackberry Swiss meringue buttercream.  This will make A LOT of frosting so if you're not planning on piping roses or ruffles or something else you should halve the recipe.

Lemon Cheesecake



Well it's officially spring break.  I should be happy but I'm mostly just stressed.  I have six weeks of classes left to graduation and in three days I learn if I get a final interview for a job.  Also, the regular homework I need to catch up on or get ahead on.  To make this a happy post it's got to be delicious.  Lemon New York Style Cheesecake.  With Lemon Curd. Good lord, can it get much better?

Orange Vanilla Bean Cupcakes


It's been a looooong loooong while.  I needed a break; a break from taking pictures of everything I bake and then editing and then writing it all up.  It doesn't sound hard but it is, especially when combined with school work, the job hunt, and my work.  I'm still baking just not photographing as much anymore-this means I sometimes get to enjoy what I bake.  Well, here's the first recipe back.

A while ago I bought bulk vanilla beans online and this was the first recipe I tried with them.  This post comes at the strong urging of a close friend who is a bit obsessed with these cupcakes.

Grizzly Cupcakes





So here's the deal: I'm from Montana.  It's a big deal.  We're a proud people, there's lets than a million of us after all. This was a big weekend for most Montanans.  It was the Cat Griz Game.  Which means the rivalry football game between the Montana State Bobcats and the University of Montana Grizzlies.  My family have always been big Grizzly fans, my mom got her MBA there and my brother currently goes there plus their team is usually really strong.  In honor of this game I decided to make a Griz cupcake.  I chose strong tough flavors kind of inspired by rocky road ice cream because a Montana cupcake deserves strong flavors.

Pumpkin Chocolate Chunk Muffins


Nothing much to say today.  It's been a long week and I'm tired, but these muffins definitely served as a pick-me-up. These are DAMN good.  They're especially good warm, when the chocolate is still melty.  A friendly piece of advice: make sure you have people to share with or you'll end up eating more than you intended.  You'll wake up from your pumpkin and chocolate coma smeared with chocolate wondering how on earth you ate four muffins and feeling a little under the weather.  It's not a road you want to go down.  Trust me.
