Homemade Huckleberry Ice Cream


So it's summer and what goes better with summer than a bowl of ice cream?  I had never made homemade ice cream before this but luckily Yo (remember Yo's famous scones?) and her family have an ice cream maker and a freezer full of fruit picked last season.  This time we decided to use up the last of the huckleberries (yum), if you don't have huckleberries feel free to substitute your favorite fresh or frozen fruit.


Ingredients

2 quarts half-and-half cream
1/2 pint heavy cream
1 1/2 cups white sugar
4 teaspoons vanilla extract
1 pinch salt
1 cup of frozen or fresh huckleberries (or any other frozen fruit)

 

 Directions:

1. Combine the half-and-half, cream, vanilla, salt and huckleberries in the freezer container of your ice cream maker.

2. Freeze according to your ice cream maker's instructions.
